Very nice, @Jase - we have similar taste in knives.
I also have a Yoshikane Gyuto (210mm), and a couple of Takeda's - a 240mm Gyuto and a 170mm Banno Bunka.
Also love my Mr Itto's.
My Drawer queen is a 270mm Thomas Gerner hand-forged genuine Damascus camp knife, with a copper pommel and brass guard.

I love the AS steel in the Takeda's - they are scary sharp! But also a bit delicate! I have a Carter Kuro-Uchi Nakiri which is similarly razor sharp and gets a little more use.
I have admired some Mr Itto's in the past but don't own any unfortunately.
I had to "Google" Thomas Gerner - I would like to own a locally made knife at some stage. I haven't bought any knives for a while now - other interests have taken priority! But I still love a knife with a bit of soul!

Look up mert tansu for kitchen knives. I have a few of his.

Beautiful knives (Mert Tansu). I have quite a compact kitchen, so typically use 210mm, although my Takeda is a 240mm.

Well - seeing that my previous photos are abominations, thanks to the ransomware move by the bucketheads last year, I'm re-posting below.
@Mark1966 has seen them in person, and nearly bolted from my abode, fearing he had entered the lair of a madman ;).



 
Wow, retail would be enough to buy a decent small Japanese runabout.
