5kg brisket (should've gone bigger!)

• Butchers Axe rub, basically a typical SPOG.

• Oklahoma Joe reverse stack smoker

• Hickory and mesquite splits

• approx 9 hours all up at 275, I'm a fan of wrapping in foil, I ain't got no time to be battling a stall! :)

Served at the end on some fresh sourdough rolls with a homemade slaw. Then topped with a Carolina vinegar bbq sauce.
